What does Chemical Change mean?

Could you kindly explain what does it mean when it says “If a chemical change occur in manufacturing of the gelatin, then there is no problem in eating it”? Almost anything we buy in US has the potential of having gelatin.

“Chemical change” here means a complete change in state. For example, when wood burns and turns into ash, we do not refer to the ash as wood anymore. This is what is meant. For example, if wine turns into vinegar, we no longer call is wine, it is vinegar and become halal to consume.
